Claire Tresidder, for the Crown Prosecution Service, said Pimlott then kicked PC Carruthers "several times".
The court heard a victim impact statement from Pimlott's father.
It read: "Today he really upset me, he was really aggressive to me and more importantly to the police.
"He was kicking like hell at the police officer. It hurt me as a parent, I didn't realise he could be that violent to other people."
Ms Tresidder said Pimlott admitted drinking while dealing with emotional issues and referred to himself as being "like Jekyll and Hyde" when drunk.
He was sentenced to eight weeks in prison after admitting the unprovoked assault of a policeman.
