Alec William Pearn, 20, of Looe, pleaded not guilty to murder during a brief appearance at Truro Crown Court.
Retired heating engineer Mr Seaman, 66, a grandfather-of-two, was attacked while walking his dog in Duloe Road on August 7 and died a few hours later as the result of a head injury.
Pearn was arrested and charged with murder the following day before being remanded in custody by Bodmin magistrates.
Wearing a dark suit jacket and white shirt, he spoke from the dock at crown court only to confirm his name and plea.
He was remanded in custody to appear again at a future date to be arranged.
His trial is expected to last between five and seven days.
